the traffic,
anything and everything.

They studied the customers, observed the menus, pricing models, products, and even the uniforms of the baristas.

They took all they were learning and scribbled their observations in notebooks.

They videotaped the stores in action.

They were prepared.

They didn't feel entitled to anything.
